A little Fall in the Summer…Crockpot BBQ Pumpkin Pork

I don’t know about you, but whenever Summer rolls around I just want Fall to be here! Maybe it’s the South Florida heat that I want to fast forward through, or just my overall passion for all things Fall related.

 

I just LOVE Fall…a new school year, the weather begins to cool down, pumpkin inspired items/foods are EVERYWHERE, there are celebrations like Halloween and Thanksgiving to spend time with friends & family…

To make this hankering feeling for Fall to commence, I wanted to experiment with a slow-cooked meal. The crockpot to me just screams comfort food. So, here you have it – a Fall inspired, slow cooked comfort food.

Instructions
  1. Rinse and pat dry the pork
  2. Place pork in crockpot/slow-cooker and sprinkle with garlic powder
  3. Pour all the ingredients on top of the pork
  4. Cook on low for 7 hours
  5. Shred the pork and let it cook on warm setting for another 30 minutes
  6. Devour!

I topped our pork on a cauliflower parmesan mash to keep it low carb and gluten-free.

The next morning I added the pork on top of a flour tortilla with sour cream and guacamole for breakfast for Adam. He ate it up in seconds. It was even BETTER the next day.
