Asian salmon & Healthy fried rice

Finally relaxing on the couch with my fiancé and sister after a long day of cleaning and getting back into the swing of things.

This evening we gulped down a delicious bottle of Shiraz that Adam picked up from Trader Joe’s accompanied by a charcuterie board of meats and cheeses. The English Cheddar Italian Truffles cheese was beyond delish! If you are a truffle lover like we are this cheese is a must.

Tonight’s dinner was Asian salmon and healthy fried rice!

 

Asian salmon recipe:

Serves 3

-3 center cut, skin removed salmon fillets

-2 tablespoons organic tamari soy sauce

-apricot preserves

-onion powder

-1 tablespoon sesame seeds ( for garnish)

Directions:

Bake on 400 degrees for 20 minutes

 

Healthy fried rice recipe:

-1 cup organic wild rice mix

-2 eggs

– 1/2 sweet onion

-1/4 cup peas

-1 tablespoon organic sesame oil

-2 tablespoons coconut aminos

-1-2 tablespoons rice wine vinegar

-onion powder

-Himalayan sea salt

We found this apricot jam from Melk, Austria during our summer trip to Europe.

   

Directions:

1. Cook rice as directed on package

2. Sauté onion in sesame oil until softened

3. Add peas ( I used frozen)

4. Remove and place in bowl

5. Scramble and cook eggs

6. Once eggs are cooked, pour rice mixture into pot

7. Season with onion powder, rice wine vinegar, coconut aminos and pinch of salt

And voile! Dinner is served

After dinner they were hankering for something sweet – what else is new? 😉 Dessert is like a religion in my family.

I whipped up a banana mug cake. Adam is always a little skeptical of my food experiments and concoctions, but luckily it came out delish! It tasted just like a fluffy, light banana bread.

 

Banana chocolate mug cake recipe:

Serves 2

-1 large very ripe banana

-1 egg, lightly beaten

-2 tablespoons vanilla almond milk (I use Silk brand)

-5 tablespoons almond flour

-dash of Himalayan sea salt

-splash of vanilla extract

-dash of cinnamon

-1/4 tablespoon baking powder

-2 tablespoon chocolate chips ( I used Enjoy Life brand)

Directions:

1. Mash banana with fork

2. Add egg, milk, vanilla extract; stir

3. Add dry ingredients


4. Fold in chocolate chips

5. Spray microwave safe mug or small dish with cooking spray; pour half batter into two ramekins

6. Cook each ramekin for 3 minutes

7. Enjoy!
