Brunch without champagne is just a sad breakfast

Adam and I hosted a tropical themed brunch for a Sunday fun-day this past weekend with some of our friends to catch up since we have been out of town most of July. And also to celebrate the engagement of Jess & Bryan!

  • Cheese Egg Soufflé
  • Breakfast Potatoes
  • Baked French Toast
  • Bloody Mary and mimosa bar with fun fix-ins
  • Fresh strawberry purée (for both the mimosas and French toast bake)
  • Friends brought over assorted bagels and cream cheese, bacon and fruit. YUM! Oh, and a sick BIRTHDAY CAKE CHEESECAKE. Do I need to say anymore? Ridiculously good.

Cheese Egg Souffle'

Instructions
  1. Remove crust from bread. Cut bread into cubes.
  2. Beat eggs and add the milk to a large bowl.
  3. Add dry mustard powder, salt & pepper.
  4. Fold in bread cubes.
  5. Add shredded cheese.
  6. Refrigerate overnight.
  7. Bake on 350 degrees for 1 hour 15 minutes uncovered.

Instructions
  1. Cut crust off of bread.
  2. Melt or cover a 9x13 baking pan.
  3. Place 6 slices of bread on bottom of the pan.
  4. In a bowl mix brown sugar and cinnamon.
  5. Sprinkle half of the sugar mixture over bread layer.
  6. Add another 6 slices of bread.
  7. In a bowl whisk eggs and milk. Pour over 2nd bread layer.
  8. Sprinkle remaining sugar mixture.
  9. Cover and refrigerate overnight.
  10. Bake covered for 30 minutes at 350 degrees. Bake an additional 30 minutes uncovered.
  11. Lightly sprinkle with powdered sugar once cooked.

Instructions
  1. Preheat oven to 425 degrees.
  2. Toss all of the prepped ingredients in a large bowl.
  3. Evenly spread potato mixture onto baking sheets ( I used two) so they do not steam. Bake for 25 minutes, tossing 2 times during this cooking period.
  4. Bring oven heat to 500 degrees and bake for another 15 minutes, tossing 2 more times during this cooking period.

Fresh Strawberry Puree'

Use this strawberry puree' in a mimosa served cold OR serve warm on top of baked french toast! Also, if you have leftover puree, you can freeze in ice tray molds and pop into your smoothie or water for flavor.

  1. Cut greens off strawberries and cut into quarters.
  2. Add strawberries, water, vanilla extract to small pot. Add salt to taste to bring out sweetness.
  3. Bring to a boil.
  4. Once boiling, bring to a simmer covered for 15-20 minutes.
  5. Use hand blender (or food processor, blender) to pureed consistency.
  6. Refrigerate if used for mimosas; Serve warm for french toast.

This group LOVES any reason to get dressed up in theme, get together and just have FUN!
Speaking of fun, check out the DIY Mimosa and Bloody Mary Bar I made. I got the idea from a cool restaurant we’ve brunched at and wanted to recreate it at home.

For the mimosas, I filled a large pitcher full of orange juice and had the champagne chilling on the side.

Mimosa fix-ins:
  • sour gummy worms
  • swedish fish
  • Large sour patch kids
  • fresh strawberry puree’

For the Blood Mary pitcher I mixed 32 oz. Zing Zang Bloody Mary mix with 1.5 cups Titos Vodka (any vodka will do).

Bloody Mary fix-ins:

  • cubed cheddar cheese
  • pepperoncini
  • green pimento stuffed olives
  • pepperoni
  • lime and lemon wedges
  • celery
