Happy Sunday people!

I’ve been cooking up a storm over here!  My typical Sunday routine involves getting in a sweat session, grocery shopping and some meal prep for the week.  Today I went to a Body Works class followed by a brisk walk at the beach. 🌴🌞

Most Sundays end with quality time at the parental units house with my sister and fiancé. And how could I forget my brother (AKA the favorite child 😋), Jackson.

Today I was sadly awoken at 3:30 in the morning by a farewell hug and kiss from Adam.  He will be away for about a month documenting the Super Bowl Build  in San Jose, California. I miss him so much when he is gone… bur I am slowly getting used to this way of life.  The heart really does grow fonder when you have time apart from your significant other. I’m so proud of him and the mesmerizing work that he does.… More on that subject at another time 🙂

Last night I wanted to make him a home-cooked meal before he departed.  Together we made coconut crusted chicken nuggets along with a cauliflower mash.  We used to step on each other’s  toes and sometimes get on each other’s nerves in the kitchen.  We both like to dominate in the kitchen, it must be our fire birth signs 🔥(He’s a Sagittarius and I’m an Aries). Now, we have a really good rhythm. Typically, one person is the main cook and the other acts as the sous chef.  He always helps me clean the dishes – hallelujah! 🙌🏼

Coconut crusted chicken nuggets recipe

Ingredients:

  •  2 chicken breasts (preferably organic;  I use Murray’s chicken breast brand)
  •  1/2 cup coconut flour
  •  1/2 cup coconut flakes, unsweetened
  •  1 egg
  •  1/4 cup coconut milk, unsweetened
  •  1 Stevia packet (optional; I use SweetLeaf brand)
  • 4 tablespoons coconut oil
  •  Salt and pepper to taste
  •  1/2 tablespoon onion powder
  •  1/2 tablespoon garlic powder
  •  Optional dipping sauces: organic ketchup, honey, ranch, coconut nectar and/or apple sauce

Directions:

  1. Put the coconut oil in deep pan
  2. Crack egg and poor coconut milk into bowl; salt and pepper; whisk
  3. Set up assembly lI’ve of a wash bowl, coconut flour bowl, coconut flakes bowl
  4. Salt and pepper into coconut flour and coconut flake bowls;  divide onion and garlic powder seasoning into both bowls;  sprinkle Stevia into coconut flake mixer for added sweetness
  5. Cut chicken into bite-sized chunks
  6. Coat chicken in coconut flour mixture
  7. Dredge chicken in egg wash mixture
  8. Place chicken pieces into coconut flakes mixture
  9. Place half of the chicken chunks into coconut oil
  10. Fry  chicken for 3 minutes ; flip and cook for 3 more minutes
  11. Once cooked, Place chicken chunks on a paper towel lined plate

Cauliflower mash recipe 

Ingredients:

  •  One bag of frozen steam-in-the-bag cauliflower
  •  2 laughing cow cheese wedges ( I used creamy Swiss French onion)
  •  1 teaspoon onion powder
  •  1/4 cup nutritional yeast (I use Bragg brand)
  •  Salt and pepper to taste

Directions:

  1.  Cook cauliflower as directed on package
  2.  Place cauliflower into blender or food processor
  3.  Add the rest of the ingredients
  4.  Blend until smooth

We dipped our nuggets into a plethora of sauces. Coconut nectar is the bomb! It has a molasses-y consistency and adds sweetness!

For dessert I had these chocolate coconut bonbons.  I’m pretty sure Trader Joe’s puts crack in all of their food – almost everything I’m tried from there I’m in love with. 🙈💕
