This week I was all about FAST and EASY meals.
After work I’ve been busy running errands for the pup and taking care of her (she got a cold and stomach bug, poor babe) and preparing for our Zombie Halloween Party!
For breakfast this week I’ve been downing smoothies everyday.
I love pre-packaging frozen fruit to grab and throw in for those hectic mornings. For the past month I have been adding Vital Proteins Collagen into my smoothies and I must say I notice I huge difference in my digestion, hair and nails.
Also, I’ve been topping off my shakes with Kind popped snack bites.
LOVE the texture and flavor it gives to the smoothie – chocolately goodness!
I topped my pumpkin pie smoothie with it…
and this Sunwarrior vanilla protein powder, Silk coconut milk and frozen peaches and raspberries hit the spot.
For lunch I’ve been eating leftover protein from dinner the night before and a random mix of quinoa (I found a frozen, pre-made one from Trader Joe’s), pickled peppers, olives, sauerkraut ( good for gut health) and marinated artichoke hearts.
This dinner took me less than 10 minutes to assemble this one tray dinner.
All I did was coat organic, sliced sweet potatoes with coconut oil, salt and cinnamon and for the chicken I sprinkled dried rosemary, salt and pepper and topped with slices of lemon.
I baked all of it on 450 degrees for 20 minutes and served it with some leftover garlic-y broccoli.
I’ve been trying my best to eat super clean the past two weeks, especially since I have not worked out in over a month!!!
I was sick for 2 weeks and then we got the puppy so it’s been hard to work it into my days.
My plan is to get back on track Monday – NO excuses!!!!
In the midst of this hectic week, I cooked up a storm for tonight’s Halloween Zombie Apocalypse party –
I’ll be serving up a DIY taco bar with allll da fix-in’s and a ginormous batch of Mexican rice.
This was the first time that I am cooked for approximately 40 people, so I hope it’s a hit!
If not, hopefully the booze will make them think so. haha
I’ll post the recipes after the party, so keep your eye out if you want it!
This week was all about my relationships as well…
I had friends and family who came through in times of happiness, and also times of need…and some who did not.
While beautiful things have come into our life (i.e. we just welcomed our new puppy into the family, house hunting, work, etc.), it has not been a smooth ride, but that is LIFE! It will always have its ups and downs.
I had some people that called or texted and asked questions about us and not just spoke about themselves; and some who did not.
There are some people in our lives who reached out to express their excitement for Adam and I with things going on presently in our lives; and again, some who did not.
It can be immensely disappointing when your expectations do not meet reality, and it hurts like hell.
But, it made me realize something important.
This week has taught me to keep my expectations LOW and ACCEPT everyone for who they are and what they bring to my life. And vice versa.
I am blessed that I have all different people in this life, both friends and family, who serve their purpose.
I have people who set me straight and call out my shit and show me the light.
I have people in my life who I can call to vent to and know they genuinely care to listen, I have others who just show up and are present… and there are others who may not do those things, but they show up in other ways.
And that is okay, because we all are going through our own journey. Who knows if someone is having a terrible day and they just can’t be there at that time.
Love (or even just like) people for who they are and not for who you want them to be. Because if you do not, that is where the disconnect begins.
I read a quote that helped me through this concept that said:
“I forgive people, but that doesn’t mean I accept their behavior or trust them. I can forgive them for me, so I can let go and move on with my life”.
Speaking of showing love, I received some cute stuff this week at work! One of my co-workers brought me back these Limone (lemon) soaps all the way from Italy!
And another colleague brought me a delicious PUMPKIN SPICE cookie (because she knows I am a PUMPKIN ADDICT!)
I whipped her up my protein pumpkin shake – she loved it! YAY
Anyways, enough rambling for the day. Off to conquer the day and party like a zombie rock-star tonight!
(and by party, I mean 2 drinks max since I can’t handle any more than that in my older age hehe 😉
