Guilt free Spaghetti Squash Taco

Adam and I are officially on the hunt. House hunt that is.

 

We brought some snacks for the way 😉

Not the healthiest, but definitely made the car ride searching more enjoyable. Rainbow cookies rule!!!

 

During the car ride my friend texted me and asked me if I wanted to get in on a leggings purchase since she knows I am a major leggings girl.

 

There was buy-one, get-one deal going on so I scored these two funky pairs. Figured they’d be fun for Halloween time (since I’m Halloween OBSESSED) or to throw on to workout.

Tonight I wanted to whip up something super easy for dinner. There are some days ( who are we kidding, lotssss of days) when the last thing I feel like doing is cooking. This dish fits the bill.

 

Spaghetti Squash Tacos

Instructions
  1. Preheat oven to 400 degrees. Slice squash lengthwise in half, scoop out the seeds (can keep to bake and eat, too), poke holes with a fork and bake for 20 minutes.
  2. Heat olive oil in pan on medium heat.
  3. Brown the ground beef. For more flavor, first saute' 1/2 diced onion before you add your beef.
  4. Once meet is browned, bring to low heat and sprinkle on your taco seasoning. I make my own, but store bought is fine! To make your own big batch to have on hand combine: 3 tbsp. chili powder, 1 tbsp. garlic powder, 1 tbsp. onion powder, 1 tbsp. dried oregano, 1.5 tsp. paprika, 1.5 tbsp. cumin)
  5. Once spaghetti squash is cool enough to handle, use a fork to remove the 'spaghetti' strands.
  6. Mix shredded cheddar (I used about 1/4 c.) to a portion of squash with sea salt.
  7. Top with ground beef, guacamole, sour cream and salsa.
  8. Enjoy!

Viola! Dinner is served. I packed up another bowl of this goodness for tomorrow’s lunch.

I made a batch of passion fruit iced tea while dinner cooked.

Bring a big pot of water to a boil. Once the water is boiling, remove from heat and add in 3 teabags of your choice and let it steep until cool.

Off to watch some mindless TV 🙂 Now that I’ve finished ‘Stranger Things’ on Netflix ( I want MORE, it was so good!!!), I was recommended to watch ‘The Night Of’ on HBO. It’s good stuff.
