Sunday meal prep going down!
Sunday meal prep! 🍯Honey Rosemary Quinoa🍚
Serves 2-3 as a side dish; 1.5 as a meal
1/2 cup organic quinoa
1/4 cup lentils
1 cup water
1/2 teaspoon rosemary
1-2 tablespoons organic honey (depending on how much sweetness you like)
1/4 c golden raisins
1/8 teaspoon turmeric powder
1/8 teaspoon curry powder
1/8 teaspoon onion powder
1 tablespoon red wine vinegar
Salt to taste
1. Salt water. Bring one cup water to a boil. Pour in quinoa and lentils
2. Cover and simmer for 12 minutes
3. Let mixer stand for five minutes covered
4. Fluff with fork
5. Add remaining ingredients
Just got finished walking with a friend by the beach. I love walking on a Sunday outside since I’m cooped up inside at work during the week. We worked up an appetite and stumbled upon a small store front restaurant called Lilo’s. We ordered ‘The Ave’ – grilled chicken, hummus, cucumber and tomato on a whole-grain bun for $4 – can’t get better than that!!! One major downfall- when I got home to sink my teeth into it there was no grilled chicken, so I called and the man told me to come back again another day for the real deal on the house.
Some other recent eats of the weekend involved a cross between an Italian thanksgiving and the Last Supper.
Some of my family members and I had dinner at one of our close family friends’ home. They are Italian and always throw a fabulous spread.
I decided to bring three humongous avocados that I had foraged last week that were finally ripe and ready to eat. Obviously, guacamole was called for.
And then dinner was served. And boy was it served!
