You heard me, CAULIFLOWER. In a muffin.

They’ll never know! Shhhhh.

These muffins are gluten, egg & dairy free, packed with nutrients and taste divine.

Enjoy 1 (or 2) for a satisfying dessert or even for breakfast.

Ingredients

Instructions
  1. Preheat oven to 350 degrees.
  2. Blend oats in a mini food processor or blender. Once ground into flour, remove to a mixing bowl.
  3. Add cauliflower and banana to food processor and grind to well combined.
  4. Add flour and spices and mix in food processor until well combined.
  5. Fold in chocolate chips.
  6. Spray muffin tin with cooking spray. Pour batter into muffin tin. Mine made 8 muffins.
  7. Bake for 15 minutes.
  8. Serve warm for best flavor! Reheat in the microwave for 15 seconds if eating later on. Store in an air tight container for 3 days.
