Something that is ALWAYS trending at my house is: SPAGHETTI SQUASH

 

Spaghetti squash has become a staple in my weekly grocery shop. Not only is it a great source of fiber and nutrients, but it is the perfect alternative for carb-loaded pasta.

Instructions
  1. Cut the squash in half and remove the seeds. Poke holes of the shell using a fork. Bake squash 400 degrees for 15 minutes
  2. Chop steamed broccoli ( I used steam in the bag broccoli)
  3. Add the broccoli, cheese, yeast, egg, sour cream, salt/pep, garlic powder and dijon to a bowl. Mix well.
  4. When the squash is done, let it cool for a few minutes. Use a fork to remove the 'spaghetti' strands onto the baking tray.
  5. Add squash to the bowl and mix well.
  6. Spray an 8x8 cooking dish with non-stick cooking spray. Add squash mixture evenly.
  7. Sprinkle 2 tbsp cheese and 1 tbsp nutritional yeast to the top. Cover with aluminum foil.
  8. Bake on 375 degrees for 30 minutes.
  9. Remove the foil and boil on high for 5 minutes.
