Cauliflower Faux Mashed Potatoes

Anytime I hear this song on the radio it makes me hungry for MASHED POTATOES!!!

 

 

To be honest, I don’t even need to hear this song to be in the mood for them!

 

When I eat mashed potatoes, I consider them to be part of a cheat meal. Why? Because they are filled with fatty milk and butter and lots-o-carbs.

 

With this recipe, I can enjoy this delicious comfort food with zero guilt. You heard me – ZERO.

Ingredients

Instructions
  1. Steam cauliflower or follow instructions on pre-cut and frozen cauliflower
  2. Transfer steamed cauliflower to a food processor
  3. Add bleu cheese and salt. Grind/chop until a smooth, mashed potato-like consistency
  4. ***Can add water/broth if not loose enough
