Crockpot Asian BBQ Pulled Chicken

In the mood for something salty, with a hint of sweetness?

If so, then this dish is for YOU!

 

 

Recommended: Serve the chicken over this brown rice!

Here’s what I did:

  1. Saute’ 1/2 sweet onion in 1 tbsp olive oil
  2. Add 1/2 cup frozen peas and carrot blend
  3. Add 2 cups pre-cooked brown rice (I used Trader Joe’s microwavable pack)
  4. Add 1/2 tbsp turmeric, 1/2 tbsp onion powder, 1/4 tbsp dried rosemary, salt and pepper to taste

 

Next up, the CHICKEN.

Instructions
  1. Place chicken on bottom of your crockpot. Optional: Add sweet potato
  2. In a bowl, mix the rest of the ingredients and pour oven the chicken.
  3. Cover crockpot and set to LOW for 4-5 hours, or HIGH for 3-4 hours. (I made mine on low for 4.5 hours)
  4. Use two forks to pull chicken apart. Turn crockpot OFF and let it sit covered in crockpot for an additional 15-20 minutes.
  5. Serve over the recommended rice or mashed cauliflower or potatoes. Garnish with sesame seeds.
