Why should you add quinoa (prounced ‘KEEN-wah’) to your diet? Easy!

 

It’s a superfood that contains all 9 essential amino acids, it’s high in protein, minerals, rich in antioxidants, the list goes on!

Quinoa makes for a great snack or meal. It can be served for breakfast, lunch and dinner. I love making a big batch to have on hand to make salads, protein bars and even dessert. Yep, DESSERT! (Wait ’til you try my chocolate-y quinoa dessert balls)

Instructions
  1. In oven/toaster oven, cook frozen squash on 425 for 15 minutes.
  2. In a small pot warm the vinegars, orange juice, rosemary, craisins and Dijon.
  3. Fold in quinoa to warm through.
  4. Fold in squash and feta.
  5. Season to taste.
  6. Optional: Serve on bed of fresh spinach for a light meal OR eat as a side dish
