Meatless Monday: Sweet & Savory Salad

I LOVE Meatless Mondays!

 

Why, you ask? SO MANY REASONS. Going meatless can reduce the risk of the following:

  • cardiovascular disease
  • diabetes
  • cancerous conditions
  • obesity

Sometimes meals are SO satisfying and flavorful that you don’t even miss the meat. Just like in this salad I made for dinner. It is full of all different flavors and textures, healthy fats and nutrients.

Ingredients

Instructions
  1. For the dressing whisk the olive oil, maple syrup, dijon mustard, water, salt and pepper.
  2. Combine lettuces, chickpeas, bleu cheese and homemade candied walnuts into a bowl.
  3. Drizzle with dressing and enjoy!
