Mini Turkey Meatloafs

FRIYAYAYYY!!!!Β Oh, how I love you!

 

Tonight we had a girls night in at one of my bestie Dara’s house. I whipped up another batch of my gluten free banana muffins.

And off I went to Dara’s house. I wore my new shirt from Target “Here for the boos” πŸ˜‰

We got a fabulous surprise visit from our friend Dani that moved to California 3 months ago ;(

I drank a wine spritzer as per usual. And we each brought some snacks to munch in including a hummus/veggie platter, goat cheese balls with mint and craisins, chips and salsa and lots o cheese! Manchengo cheese is everything!

Recent eats of lately: mini turkey meatloaf

 

One of my favorite food staples I always pick up on my weekly food shop is lean, ground meat.

 

I switch it up between ground beef, chicken and turkey.

 

Ground meat is so versatile – you can make a quick bolognese, meatballs, tacos or makeΒ these cute, mini meatloaves.

Ingredients

Instructions
  1. Preheat oven to 375 degrees. Spray muffin tins with non-stick cooking spray.
  2. In a bowl add meat, eggs, BBQ sauce, ketchup, bread/cracker crumbs, spinach, salt and pepper
  3. Fill muffin tins with the mixture
  4. Bake for about 25-30 minutes, depending on your oven.
