These make-ahead breakfast potatoes are crispy on the outside and soft on the inside. They are filled with flavor. Prep and cook the day before and reheat the next day!

Instructions
  1. Preheat oven to 425 degrees.
  2. Toss all of the prepped ingredients in a large bowl.
  3. Evenly spread potato mixture onto baking sheets ( I used two) so they do not steam. Bake for 25 minutes, tossing 2 times during this cooking period.
  4. Bring oven heat to 500 degrees and bake for another 15 minutes, tossing 2 more times during this cooking period.
