Overnight Apple Pie Chia Pudding

Last night I was making a frittata for dinner (I love a quick and easy din!) and got a little surprise. TWINS

A little freaky, but nonetheless delicious.

 

I always add an extra 2 eggs to my fritatta so I can have leftovers for breakfast or lunch the next day.

 

Speaking of breakfast, I usually drink a protein fruit smoothie most days, but lately I’ve been mixing it up a bit.

 

Yogurt and berries

waffles (mostly on the weekends), oats (once in a while since I noticed I felt extra sluggish starting my day with a big bowl o carbs) and chia seed pudding.

 

I did a Trader Joe’s run this week and bought a ginormous bag of organic Gala apples.

and my favorite nut milk. Carrageenan free!!!

Ingredients
Servings: person
Instructions
  1. Mix chia seeds, milk, spice and salt in a container. (I use a mason jar)
  2. Set mixture in the refrigerator for one hour to gel.
  3. Dice apple and place on top of chia mixture.
  4. Let it get in the fridge overnight.
  5. When you are ready to eat, stir the mixture well. EAT AND ENJOY!
