Pumpkin Pancakes

Happy Monday fun-day y’all!

How was your weekend going?

On Saturday Adam and I had a laid back day filled with some fun eats #FoodieCouple

First, we went to a Spirit Halloween store and picked up some stuff for our costumes. Zombie party!!!

And a  lobstaaaa dinner.

We started with some salads.

The maytag bleu cheese for me (this salad is insanely DELISH!)

This morning some hearty, grain free, high protein pancakes are making their debut.

And since it is PUMPKIN EVERYTHING season, I’m whipping up some pumpkin pancakes.

Here’s how it went down:

Instructions
  1. Whisk all the ingredients in a bowl (except maple syrup).
  2. Spray a large pan with cooking spray (I used coconut spray) and bring to medium heat.
  3. Use a 1/4 measuring cup to scoop pancakes onto pan. I had room on my pan to make 3 at a time.
  4. Cook on both sides for approximately 4 minutes per side.
  5. Optional, but recommended: Top with maple syrup OR almond/peanut butter OR pumpkin butter.
