Quinoa in a dessert???

HAPPY FRIDAY!

 

I am so happy for the long weekend ahead, since Monday is a holiday. What are you up to this Labor Day weekend?

 

Plans for this evening: R&R…I met my girlfriend out for Happy Hour last night and was sooooo tired today.

We shared some apps and drinks with some live music:

Who doesn’t love live music?! This was the cutest folk singing couple who had gotten married only three days before.

 

The rest of my weekend will definitely include some pool time (if the rain doesn’t spoil it from this hurricane Hermine), seeing friends and family and cooking.

I made a big batch of quinoa this week to throw in salads and…

 

DESSERT!

 

YEP!

 

You read that correctly – QUINOA – in a dessert.

Ingredients
Servings: balls
Instructions
  1. Pulse dates in a food processor until it forms a ball.
  2. Add pre-cooked, COLD quinoa, almond butter, coconut and a pinch of salt. Pulse until well combined.
  3. Hand mold into golfball sized balls.
  4. In a microwavable dish, heat chocolate chips and milk for 30 seconds. Stir. If still not melted, microwave for an additional 20-30 seconds. (***be careful that the chocolate doesn't burn!)
  5. Drizzle chocolate sauce onto the balls.
  6. You can eat immediately OR refrigerate and eat cold.
  7. Store in the refrigerator.
