Strawberry Quinoa Salad

Or better known as quinoa.

 

You need quinoa in your life… Here are just a few reasons why:

  • it’s gluten free – perfect for people with gluten intolerance

Try out this light and bright quinoa concoction. You can eat this as a meal or a side dish and serve hot OR cold. Whatever you prefer!

Instructions
  1. Rinse the quinoa in a fine mesh colander!!! Very important to rinse off quinoa's natural coating, saponin.
  2. Bring quinoa and water to a boil. Cover, reduce heat to low and cook for 15-20 minutes. While the quinoa cooks, prep the other ingredients in a bowl.
  3. Remove from the heat and let it sit covered for 5 minutes.
  4. Fluff with fork.
  5. Serve hot OR cold.
