Sunday Dinner: Chicken Parm

Sunday, how did you get here so quickly?

 

Saturday’s are for errands and fun, Sunday’s are for food shopping, laundry and preparing for the week ahead, and then…wait, where’s the day of rest?? Anyone else need an extra day in the weekend?

 

We stopped by Home Depot to price out some home improvement ideas. #ThingsNewlyWedsDo

Anywho, time to figure out Sunday night dinner. On Sunday’s we usually go to my parents’ house for din din, but they’ve been away. We miss them. COME HOMEEE!

 

Chicken Parmesan takes the win!

Instructions
  1. Preheat oven to 350 degrees. Heat olive oil in a large saute' pan.
  2. In a food processor grind rice crackers to a bread crumb-like consistency (or you can put them in a ziplock bag and smash them with a rolling pin to get out some aggression).
  3. Add garlic and onion powder, oregano, salt and pep to taste to the ground crackers.
  4. Crack eggs and beat to mix. Coat chicken in the egg wash, then coat with rice cracker mixture.
  5. Saute' chicken on both sides until golden brown. ***Cook chicken in batches, do not over crowd the pan ***Chicken does not need to be cooked through, as it will finish cooking in the oven
  6. In a large lasagna size baking dish add a thin layer of tomato sauce.
  7. Place chicken on top of sauce.
  8. Cover with a medium layer of sauce.
  9. Sprinkle with shredded cheeses and a dusting of parmesan cheese ***we used mozzarella and cheddar since we didn't have enough mozzarella
  10. Bake in oven for 20 minutes.

    This dish looks good. Interesting with the rice crackers instead of bread crumbs. Must try. It looks delicious.
