Stuffed Spinach & Artichoke Pesto Chicken

You make this chicken dish.
Because it’s delicious, takes less than 10 minutes to prep, has tons of flavor and did I mention it’s delicious?!
Here’s a recipe for your not-another-boring chicken dinner:

Instructions
  1. Season both sides of butterflied chicken with salt and pepper
  2. Spray baking dish and place the chicken in baking dish
  3. Stuff chicken with spinach and artichoke; use a toothpick to hold them closed
  4. Spread 1 tbsp pesto on top of each chicken breast
  5. Bake on 400 for 40 minutes

And voila! No more boring chicken!
I was avoiding  dairy, but to take this dish over-the-top, stuff it with any cheese you like! This would go beautifully with a goat, provolone or Swiss cheese.
This dish is super flavorful and will be a definite crowd pleaser.
